I use Frank’s Red Hot for these Buffalo Cauliflower Bites, but you can use whatever you like to heat things up (Pico Pica is another good one).
Use coconut oil if you’re wanting to keep it vegan. I make it either way, coconut oil imparts a sweeter flavor, but oooh yes, I do love butter)
Preheat oven to 400 degrees.
Rinse, and cut into pieces
1 Large or 2 Small heads of Cauliflower
In a large bowl, toss cauliflower with:
Coconut Oil or Butter – about 1/2 cup, melted
Salt, Pepper, Garlic Powder to taste
Roast on parchment covered cookie sheets for about 25 minutes, until getting crisp on some edges (toss about halfway through if you like)
Meanwhile melt 1/2 cup of butter (or coconut oil) in a saucepan, and whisk in 1/2 cup of your preferred hot sauce until emulsified.
Place roasted Cauliflower in a large bowl, and toss with the hot sauce. Now they are Buffalo Cauliflower Bites. Easy peasy.
Serve with celery and blue cheese dressing (ok well ranch if you’re a heathen).
